I’ve said it a million times…Andrew’s favorite supper is my mom’s meatloaf recipe. If I made it every night of the week, he wouldn’t complain. Over the years, I’ve tweaked it into meatballs, a sloppy joe and even a burger…I’m always thinking of ways to mix and match his favorite recipe. The other night, I made a turkey version and it was a big hit! My kiddos and my hubby were happy eaters. Praise the meatloaf!
This recipe made 5 mini meatloaves but of course, you could place it all in an 8×8 baking dish and make one meatloaf instead. You would adjust your baking time to about 30 minutes.
Shopping List
1 pound ground turkey
1 cup Panko or breadcrumbs
2 eggs, beaten
about 6 to 8 green onions, chopped (reserve a few for the end)
1 teaspoon salt
5 tablespoons Worcestershire sauce, divided
1 1/2 cups ketchup, divided
2/3 cup brown sugar
1 teaspoon mustard
Preheat oven to 350 degrees
Line a baking sheet with foil (for easy clean up) and lightly spray with Pam. Set aside.
Mix ground turkey, Panko, eggs, green onions, salt, 3 tablespoons Worcestershire sauce, and half a cup of ketchup in a bowl. Shape the mixture into 4 or 5 mini meatloaves. Place on prepared baking sheet and place in the oven for about 20 minutes.
While the meatloaves are baking, combine remaining 2 tablespoons Worcestershire sauce, one cup of ketchup, brown sugar and mustard in a bowl. Once 20 minutes is up, top each meatloaf with sauce and return to oven for 5 to 10 more minutes.
Remove from oven, garnish with a few more green onions and serve.

My family loves meatloaf too and I'm always finding new ways to serve it. Another thing we have at our house is what I call Haburger Hash. I brown up the meat like for sloppy joes, then I add diced red potatoes (or to make it even easier frozen diced hashbrown potatoes) all of my meatloaf ingredients, and beef broth to help the potatoes cook better. I cook all that down together until the potatoes are cooked and then it's finished. My family puts a little extra ketchup or sauce on and devours this! It's like a skillet hamburger casserole. I'm sure this would work with your sauce too.

Just wondering could you use tin of chopped tomatoes or puree and half the ketchup?

I would sub tomato sauce (found in the 8 oz cans) instead. 🙂

Omit the egg, double the panko and bake it in an 8×8 pan :). Enjoy!

Made these last night! DELICIOUS! I was out of Worcester sauce so I used honey mustard instead and didn't have green onion so I just finely chopped a regular onion. My husband, 3 and 2 year olds LOVED IT! This is in the rotation now! Thanks for the recipe!

Made these for dinner last night, YUM! My husband was leery, thought the turkey would make a meatloaf that was too dry (and I have to say I was a little worried too), but they were very moist and really good flavor. Will make them again for sure! Your recipes are batting 1000 in our house.
