It’s almost Memorial Day weekend! Yay!
I love, love, love celebrating Memorial Day! This year, I have a menu designed for a family gathering of four or it can be multiplied and serve a large party too. The best part? It’s simple but crowd pleasing. Red, white, blue and delicious is the theme of our Memorial Day weekend.
First up…
Start your Memorial Day off right with my Red, White and Blueberry French Toast. You use blueberry bagels as your bread and make a quick strawberry sauce to go down on top. Festive and yummy!
My Mama’s Corn Salad is a MUST for all summer get-togethers. It’s not a party until this is on my plate.
Once you try these BBQ Green Beans you won’t go back to boring old regular ones. The best part about this version is that the beans cook in the slow cooker…one less thing to mess with during the party.
This Tortellini Pasta Salad could be a meal in itself…or a delicious side too.
Burger Choice #1 is my Tomatillo Pineapple Burger. Avocado, a little Jack cheese and a pineapple salsa…my oh my…p-a-r-t-y time!
And burger choice #2 is my Meatloaf Burgers! The sauce is what makes it a meatloaf burger…in honor of Andrew’s favorite meal (meatloaf), I made it into a burger.
And wrap up your supper with my Red, White and Blue Trifle. I love that you make this in advance…that way on party day, you just pop it out of the fridge and serve.

A girl after my own heart – I hate mayo & tuna also!!! (eggs & bananas too!) The corn salad sounds great, a lot like a corn dip I love. Can't wait to try it! A quick reminder about salads or dips made with mayo – they do not need to be left out in the heat for any length of time. That's often a cause of food poisoning and ain't nobody got time for that! The tomatilla & pineapple salsa sounds really good too. I think my picky husband might even eat it! 🙂 I just love summer and fresh vegetables!
