I don’t know about you…but over at the Shull house, we’re gearing up for Memorial Day. For me, Memorial Day is the beginning of summer. This year, I thought I would make a festive breakfast to serve my family on Memorial Day (or July 4th too!). It’s a blueberry bagel French Toast with fresh strawberry sauce down over the top. Delish!
This recipe serves four.
Shopping List
about 4 cups chopped strawberries
1/2 cup sugar
2 eggs, lightly beaten
1 1/2 cups milk
1 teaspoon vanilla
1 tablespoon cinnamon
4 Blueberry Bagels, split in half
I would begin by making the strawberry sauce first and then the French toast. Go ahead and preheat your griddle or large skillet to medium-high and lightly spray with Pam while you’re making your sauce (so it’s ready and waiting for your French Toast).
To make the sauce, in a small saucepan, combine your chopped strawberries and sugar over medium-high heat. Stir them around occasionally and they’ll start to melt together. I used a wooden spoon and mashed the strawberries as they cooked. Once they become jam-like (it took about 8 minutes), remove from heat and set aside.
In a mixing bowl, beat the eggs, milk, vanilla and cinnamon. Dip each half of a bagel into your egg mixture and place on your hot griddle or skillet. Cook up each side of the bagel about 2 or 3 minutes.
Remove from griddle and serve with strawberry sauce down on top.

Made this today as an early 4th of July treat and it was amazing! Only problem is my strawberry sauce didn’t turn into a jam like consistency…oh well! Maybe next time, still very yummy.
