Bacon and Bleu…and a Friday.
I don’t think we need much more, right?

This recipe makes 4 (half-pound) burgers.
Shopping List
2 pounds of ground beef
a little steak seasoning (we used Montreal Steak Seasoning)
6 slices of bacon (I used turkey bacon but you can use pork)

1 red onion, chopped
Extra Virgin Olive Oil (EVOO)
salt and pepper
about a cup of crumbled bleu cheese

Preheat your outdoor grill or indoor grill pan over medium-high heat.
Add about two tablespoons of your steak seasoning to the ground beef. Divide mixture into four sections and make four patties (make sure to press down each patty a little in the center to avoid the “burger bulge” when they grill).
Add your burgers to the grill and begin grilling (we do about 6 minutes or so each side).
Meanwhile, in a large skillet over medium-high heat, add your bacon in and cook until crispy (flipping over half-way through). Remove your crispy bacon to paper towels to cool and then crumble. Add your chopped red onion to the bacon drippings (you might need a touch of EVOO in there if you’re using a lean turkey bacon). Saute your onion a few minutes over medium-high heat until they’re soft and caramelized. Sprinkle in some salt and pepper.
To serve, take each bun, add a few big fresh spinach leaves on the bottom and then add your burger patty. Top with some caramelized red onion, bleu cheese crumbles and your crumbled bacon.
Serve and enjoy.

Yum!!! I really want to just eat my way through all of your burger recipes this summer. It'll be like the grilling version of that Julia Child movie. Haha!

I love blue cheese on a burger! AND bacon? Yes!!!!!

This is a family favorite! I would love to see this as a sloppy joe. In my house grilling is a weekend activity but sloppy joes are a Thursday favorite.
