A Key Lime Pudding Pie.
Simple enough that your kiddos can make this with you from start to finish.
If you can’t find Key limes, you can substitute regular limes or even lemons too.
I used 10 mini pie shells but you can use one large crust and make one pie too!
The creamy vanilla pudding and the tart citrus go great together in this make ahead dessert.

This recipe makes either one large pie or 10 to 12 mini pies.
Shopping List
1 (3 oz) box of instant vanilla pudding
1 cup of milk
1 cup whipped topping (I used Cool Whip), thawed slightly
1/4 cup fresh key lime juice
2 tablespoons key lime zest
1 prepared graham cracker crust or 10 to 12 mini graham cracker crusts

In a large mixing bowl, whisk your dry vanilla pudding mix and milk about two minutes. Whisk in your Cool Whip, key lime juice and lime zest until just combined.
Pour mixture into your pie crust(s) and refrigerate at least 4 hours up to 2 days.
Remove from fridge and garnish with a little more zest (optional) and serve.

I am going to make this with a few adaptations! Instead of mini pies, I am going to make it into a freezer bar! Double up the recipe and put it in a 13×9 pan and make my own crust for a big family gathering coming up next month.
Recently at a restaurant I ordered key lime pie that had a ginger snap crust… it was to DIE for! I might try that as well!
