Meal Planning Monday #94

Monday, Monday, Monday.
I told Andrew that I want to grill and swim tonight.  I also want homemade ice cream.  Do you guys make homemade ice cream?  We used to have one of those crank machines where you use the rock salt and have to babysit it…and then this year, we got smart and bought a counter machine.  It’s life changing.  We spent the first 10 years of our marriage babysitting ice cream and now…you just pour it in the counter machine and go.  Simple.
That’s our Monday.  I hope you have a wonderful evening too!
Pizza Burgers  for dinner this week.  Pepperoni, tomato, fresh mozzarella and basil on a burger…yum.
Cajun Shrimp Pasta might be my kiddos’ favorite dish right now.  We’ve been eating it a lot this summer.  They love the shrimp and noodles, and I love how simple it is to whip together.
Jalapeno Peach Chicken is a great family meal!  If your kiddos don’t love the sauce, they can eat their chicken with ketchup or BBQ sauce.  Jalapeno and peaches are the perfect marriage of flavors…try it!
Pineapple Teriyaki Salmon…mmmmm…so good!
If you’re just not in the mood to grill or cook on the stove, then my Italian Brisket Sandwiches are what’s for dinner.  The slow cooker does the work and you just enjoy the delicious dinner.
This is one of my very favorite bundt cakes…Peanut Butter and Banana.  It is insanely moist and dense.  So good!
And one more summertime treat…
Lemon Icebox Pie with a Golden Oreo Crust.  Your kiddos will love making this with you!  Such an easy treat to do in the kitchen with them!

    Hi shay- do you have any favorite sides you make with the salmon? I always have trouble finding sides that go well with fish! Love your recipes!

      Roasted veggies! Broccoli, cauliflower, asparagus, green beans…roast any of it!

    Please share your ice cream recipes using your machine! I just found my moms ice cream maker hidden away, and I have been experimenting with it. I found recipes in a Ben and Jerry's recipe book, but a lot are pretty difficult and time consuming, before you get to the freezing part! And I know you'd have lots of yummy creative and time saving ideas !
