And it all goes in the slow cooker.

This recipes serves about 4 adults.
Shopping List
1 pound of ground beef, browned and crumbly
1 onion, chopped
3 garlic cloves, chopped
2 (15 oz) cans black beans, rinsed and drained
2 cups beef or chicken stock
2 cups beef or chicken stock
10 slices of uncooked bacon, chopped into bite sized pieces (reserve some for garnish at the end)
1 (14 oz) can diced tomatoes
2 tablespoons of cumin
sour cream to garnish
In your slow cooker, layer in your browned and crumbly ground beef, chopped onion, chopped garlic, stock, black beans, chopped bacon (reserve a little for the end), tomatoes and cumin. Cover and cook on low 7 to 8 hours or on high 3 to 4 hours.
Right before you’re ready to serve, take your reserved bacon pieces and add them to a dry skillet to crisp up. Once they crisp up, remove the pieces to a paper towel to drain.
Ladle soup into bowls and top with sour cream and crispy bacon pieces.
Lots of protein, lots of flavor, one simple supper for your table.
