I’m re-posting my Turkey & Cranberry Quesadillas recipe for you today. Take your leftovers from yesterday’s feast and turn them into something really tasty. Enjoy!
Take your turkey, take your cranberry sauce, take some white cheddar cheese and a few green onions and make you a quesadilla. Done.
Enjoy friends!
You can make as many of these as you want…you can even just make one! It’s a great little way to get rid of Thanksgiving leftovers!
Shopping List
“burrito sized” flour tortillas
Turkey
Cranberry sauce (left over or use a 14 oz can of whole cranberry sauce)
a few thick slices of white cheddar cheese
chopped green onions

Preheat your indoor griddle or a big skillet to medium-high heat. Spray lightly with cooking spray.
Lay out your flour tortillas. Place turkey across the bottom half of each tortilla. Add a few tablespoons of cranberry sauce, a few slices of cheese and a few chopped green onions to each one. Fold the top part down to cover the bottom portion.
Place each quesadilla in your skillet one at a time. Brown on both sides (about 4 minutes or so each side). Remove once browned up and slice in half (to give you two quesadillas). Repeat with your other tortillas.
