Bacon & Spinach Quiche

Hello quiche.
We love quiche recipes at our house because they work for both breakfast and dinner.  Plus, they’re great for make ahead suppers too.  You can assemble this up to the day before, keep it covered in the fridge and then pop it in the oven to bake before supper (or breakfast).
This recipe is my friend Manda’s.  In her original recipe, she only calls for bacon, but I added about a half a pound of ground chicken sausage to ours for just an extra punch of protein.  Either way you do it, you’ll love it!
This recipe serves about six.

Shopping List
1 (9 inch) pie
crust (refrigerated or homemade)
5 large eggs, beaten
1 cup heavy cream
½ teaspoon onion powder
½ teaspoon of pepper
¼ teaspoon of salt
1½ cups chopped fresh spinach
6 strips of bacon, chopped ( we both used turkey bacon)
½ pound of browned and crumbly sausage, optional (pork or chicken sausage)
1 cup shredded cheddar cheese
Preheat oven to 375 degrees.
Lightly spray a pie plate with cooking spray.  Fit your pie crust down inside.  Set pie crust aside.
Beat eggs with
whisk until well blended. Beat in cream, onion powder, salt and pepper.
In the bottom of your pie
crust layer half of your chopped spinach, bacon, sausage and cheddar cheese.  Repeat for one more layer.
egg and cream mixture into the pie crust. Bake for 35 to 45 minutes until egg
mixture is firm and the top is golden. Cut into wedges and serve warm.
A slice of this will make your family very happy!

Making this ahead tonight for tomorrow's dinner! Think 2% milk would be Ok instead of heavy cream? It's the only thing I have on hand. Thanks!

Thanks for the response! One more question and this might be silly but… do I need to cook my bacon first?!? Thanks again!!

This quiche has already become so beloved in my family that my son requested it for his birthday breakfast this morning. Thank you for giving us a new family favorite 🙂
