This little supper comes together in no time flat thanks to the slow cooker! Pineapple, chicken, rice…a winning combination on a weeknight.
This recipe serves four.
Shopping List
1 pound of chicken breasts
1 (8 ounce) can of pineapple juice
1 (15 oz) can of crushed pineapple (do not drain)
about 2 cups of your favorite BBQ sauce
2 cups of cooked rice
chopped green onion, to garnish
chopped red bell pepper, to garnish
In your slow cooker, layer in your chicken breast, pineapple juice, crushed pineapple and BBQ sauce. Cover and cook on low 6 to 8 hours or on high 3 to 4 hours.
When you’re ready to enjoy, remove the lid and shred your chicken right inside the slow cooker using two forks.
To assemble, put a little rice on each plate and then top with your shredded chicken mixture. Garnish with chopped green onions and chopped red bell pepper.
That’s it!

Our favorite BBQ sauce is Sweet Baby Ray's. We love it! They make a Hawaiian BBQ sauce that would probably be really yummy in this recipe.
