It’s a Sloppy Joe that tastes like Chicken Cacciatore. Bam.
Sounds fancy…but easy enough for even your busiest weeknight.

This recipe serves four.
Shopping List
1 pound of ground turkey
1 onion, chopped
3 cloves of garlic, chopped
1 red bell pepper, chopped
about one cup of white wine (or use chicken stock if you prefer)
1 (14 oz) can of diced tomatoes
1 (8 oz) can of tomato sauce
capers to garnish (optional)
chopped basil to garnish (optional)
four buns for serving
Extra Virgin Olive Oil (EVOO)
salt and pepper

In a large skillet over medium-high heat, brown your ground turkey in a good drizzle of EVOO. After it’s browned and crumbly, stir in your chopped onion and a big pinch of salt and pepper (you may need to add a touch more EVOO). Saute about five minutes or until onion is tender. Stir in your garlic and chopped bell pepper and saute another minute or two.
Next, stir in your wine and de-glaze the pan (get the little bits off the bottom with your spoon). Stir in your diced tomatoes and tomato sauce. Reduce heat to medium-low and simmer everything together about five minutes.
To assemble, take each bun and place a large scoop of your turkey mixture right on top. Garnish with capers and torn basil. Serve either open face or as a sandwich.
