So, this is really all about the side. We love making roasted veggies for dinner, so the other night, I made up some Dijon Oven Potatoes and we served them with grilled turkey sausage. We also added a Caesar salad to the mix and called it a day. So. Simple.
Serve yours with grilled sausages, burgers, chicken…whatever you like. This is just a really easy and delicious way to do potatoes.
This recipe serves four.
Shopping List
5 large new potatoes, scrubbed clean and chopped into bite-sized pieces
1 onion, chopped
3 tablespoons of Dijon mustard
about 3 tablespoons of Extra Virgin Olive Oil (EVOO)
salt and pepper
about 2 tablespoons of fresh rosemary, chopped
Preheat your oven to 425 degrees.
Line a baking sheet with foil and lightly spray with Pam (for easy clean up!). Add your chopped potatoes and onions across the baking sheet. Set aside.
In a bowl, whisk together the Dijon mustard and EVOO. Whisk in a pinch of salt and pepper. Pour your mustard mixture down over your potatoes and toss everything together. Stick your baking sheet in the oven and roast your potatoes about 18 to 20 minutes. Remove from oven and garnish with a little fresh rosemary and serve alongside something yummy (like grilled up turkey sausages).
Easy. I love easy on Wednesday night.
