Gorgonzola & Grilled Peach Burger

Well…I did it.  I created my all-time favorite burger.  I mean friends…I was swooning over this baby.

Peaches are in season every June in Texas and smell just divine, so I picked up a big batch, brought them home and grilled them along with my burgers.  Then, I topped each burger with arugula, sauteed onions, a nice grilled peach slice and Gorgonzola cheese.  The result?  Amazing.

I’m a knife and fork burger gal, so this one was right up my alley.  Love, love, love, LOVED.  Your weekend needs these burgers.

This recipes makes four (half pound) burgers.

Shopping List
2 pounds of ground beef
about two tablespoons of your favorite steak seasoning (I used Montreal Steak Seasoning)
1 large red onion, chopped
2 peaches, sliced
about 2 cups of arugula
about a cup or so of Gorgonzola cheese, crumbled
4 burger buns
Extra Virgin Olive Oil (EVOO)
salt and pepper

Preheat your outdoor grill or indoor grill pan over medium-high heat.
Add your steak seasoning to your ground beef.  Divide mixture into four sections and make four patties (make sure to press down each patty a little in the center to avoid the “burger bulge” when they grill).

Add your burger patties to the grill and begin grilling (we do about 6 minutes or so each side).  At the same time you’re grilling your patties, grill your peach slices.  Add the slices directly to the grill and grill up each side about 1 to 2 minutes.  Remove to a plate while you’re waiting on your patties to be finished.

Meanwhile, in a large skillet over medium-high heat, add your chopped onions to a drizzle of EVOO.  Add in a big pinch of both salt and pepper.  Saute the onions until they start to caramelize (about 10 minutes).

When your patties are done, remove from the grill and assemble your burgers.  Bun, patty, arugula, caramelized onions, grilled peach slice and Gorgonzola crumbles on top.

The flavor combinations are just out of this world.  The peaches are sweet, soft and compliment everything.  Best. Burger.

Happy Weekend!
