Strawberry Margarita Ice Cream Pie

Well, I made us a little grownup dessert and it was delish!

I wanted an ice cream pie that tasted like a frozen margarita, so I added a little tequila to some sherbet, layered it with strawberry ice cream and put it all into a graham cracker crust.  Easy as pie 😉 .

If you’re having a grownup Memorial Day party, you must bring this!  I promise you, you will not be disappointed!!

This recipe made one ice cream pie.

Shopping List
1 pre-made graham cracker crust (found on the baking aisle)
1 pint of strawberry ice cream, softened
1 pint of lime sherbet, softened
the zest of two limes, divided
1 shot of tequila
Whipped cream to garnish

Set out your pie crust.

Next, either allow your ice cream and sherbet to thaw a little in the sink or place them in the microwave for about 45 seconds to get nice and soft (not melted!).  Spoon your strawberry ice cream down over the bottom of your crust (you might not need to use all of it).  Next, take your lime sherbet and spoon it into a mixing bowl.  Once it’s in the bowl, stir in your tequila and the zest of one lime.  Mix this up and then spoon this over your strawberry layer.  Cover and freeze at least four hours (but up to two days).

When you’re ready to serve, remove from freezer, slice into wedges and serve garnished with whipped cream and a bit of lime zest.  You could also add a sprinkle of sea salt too to really make it taste like a margarita.

This pie tasted like summer.  You and your friends will love it!
