It’s FRIDAY!!
Oh my goodness, I’m pumped about this weekend! You know what else I’m pumped about? This dinner. We eat burgers 2 to 3 times a week during the summer because EVERYONE LOVES THEM. (And all the mamas of kiddos said Amen!). When you find something your whole family enjoys, you make it. On repeat. So, I combined two of my faves into one dinner: burgers and a wedge salad. I love a wedge salad at a steak place. We grilled up our burger patties AND we grilled up our lettuce too. Then, we topped our burgers and grilled lettuce with all of the yummy flavors you find on a wedge salad. A-mazing.

This recipe makes four (half-pound) burgers.
Shopping List
2 pounds of ground beef
Extra Virgin Olive Oil (EVOO)
about 2 tablespoons of your favorite steak seasoning
1 head of iceberg lettuce, chopped into four big pieces (keeping the stem intact at the bottom so it doesn’t come apart when you grill it)
Ranch dressing to drizzle
6 pieces of bacon, cooked to a crisp and then crumbled
cherry tomatoes, quartered
1 red onion, chopped
crumbled bleu cheese
4 buns
chopped parsley to garnish
Preheat your outdoor grill or indoor grill pan over medium-high heat.
In a mixing bowl, combine your ground beef, a few drizzles of EVOO and your steak seasoning together. Divide this mixture into four sections and make four patties (make sure to press down each patty a little in the center to avoid the “burger bulge” when they grill).
Add your burger patties to the grill and begin grilling (we do about 6 minutes or so each side). About two minutes before you’re ready to remove, add your four pieces of iceberg lettuce to the grill and grill up both sides. If you leave the stem intact, then the lettuce won’t really fall apart when you’re grilling it. We grilled the lettuce about a minute or two per side. Just long enough to get a smokey touch and great grill marks.
When your patties and lettuce are done, remove from the grill and assemble your burgers. Bun, grilled iceberg lettuce, patty, a drizzle of Ranch dressing, quartered cherry tomatoes, chopped red onion, bacon crumbles and bleu cheese.
Serve and enjoy!
