Creamed Spinach is always one of my favorite sides to order at a restaurant. In my version, I added lots of roasted garlic, Parmesan cheese and then a sprinkle of breadcrumbs on top for texture. You could eat this as a dip…but it pairs perfectly with steak, chicken, pork or turkey as a side too. Perfect for any supper, you need to try my easy Roasted Garlic Creamed Spinach.
Shopping List
1 bulb of garlic
Extra Virgin Olive Oil (EVOO)
salt and pepper
2 (10 oz) boxes of frozen spinach, defrosted with all of the excess water squeezed out
1 (8 oz) package of cream cheese, softened
3/4 cup milk
1 cup grated Parmesan cheese
1 cup of bread crumbs
Before you start, defrost your spinach in the microwave. After it’s defrosted, take a clean kitchen towel and put your spinach inside. Next, over your sink, squeeze all of the excess water out of your spinach inside your towel (water will pour into your sink). When it’s all squeezed out, set the spinach aside.
Preheat oven to 400 degrees.
Grease (I used Pam) a 9×9 baking dish. Set aside.
About an hour before you’re ready to start cooking, you need to roast your garlic. Take your entire bulb of garlic out and chop the top off revealing the little cloves inside. Just slice off the top. Drizzle about a tablespoon of EVOO down over the bulb and add a generous pinch of salt and pepper to the top. Next, wrap the garlic bulb in foil and place it on a cookie sheet in your preheated oven. Allow your garlic to roast about one hour.
After an hour, remove the garlic from the oven and unwrap it from the foil. Take a fork and pull out the garlic cloves from inside. They will pull out easily and be super soft. Place these on your cutting board and kind of mash them up with your knife. They’re be so soft that this will be simple! Set this aside.
In a mixing bowl, add in your spinach, cream cheese, milk, Parmesan and smashed garlic cloves. Using a mixer, lightly mix it all together. Do not over mix! Just lightly mix it until it’s all incorporated. Mix in a big pinch of salt and pepper. Pour this mixture down into your prepared baking dish. Finally sprinkle over your breadcrumbs.
Pop this in the oven and bake 20 minutes or until the edges are lightly browned and everything is bubbly.
Remove from oven and serve immediately.

I can’t find the place to leave this comment on that recipe page, but will it work to do Sheaffer’s Pineapple Casserole a day or 2 ahead and bake it the day I need it??
