There’s a little cafe on our town square that makes the best grilled cheese sandwich. They use a homemade pimento cheese and then add in candied jalapenos, orange marmalade and bacon.

I’m telling you…it’s worth every calorie. So, at home, I recreated this sandwich using grated cheddar and Gruyere and adding in a bit of spinach. If you’ve never cooked with candied jalapenos before, don’t be scared! They have big flavor but aren’t too hot. You can use store bought orange marmalade or you can click HERE and see how I made it from scratch.
This sandwich is my very favorite thing to eat at lunch!

Shopping List
2 pieces of bread (I used a Jewish Rye)
A slice of cheddar and a slice of Gruyere (I like to grate mine to make it melt more evenly)
2 pieces of bacon, cooked to crisp (I used turkey bacon)
6 or 8 candied jalapenos
a few fresh spinach leaves
orange marmalade

Preheat your grill pan or a large skillet to medium-high. Lightly spray with cooking spray.
Assemble your sandwich first by spreading marmalade down on both slices of bread. Next assemble: bread, spinach, cheese, bacon, jalapenos and top with bread. Grill up your sandwich until the cheese is nice and melted (flipping it over halfway). If you really want your sandwich to be decadent, add a little butter to the outside of both pieces of bread before grilling.
Once cheese is melted, slice and serve.

We must have been on the same wavelength. I made a smoked Swiss/cheddar grilled cheese with bacon and apricot pepper jelly for lunch today. A few slices of a Honeycrisp apple and I was in heaven!
