Meal Planning Monday

It’s Monday!

And I’m so tired.  Hahaha!

Okay, we got home from Nantucket late last night and then friends…we’re leaving again tomorrow for a new adventure!  Holy cow!  I need to do laundry STAT!

I’m still blogging this week, so come on back y’all, but in the meantime, if you need to make dinner for your peeps tonight then get your pen and paper out, jot down your grocery list and head to the store.  Your week is going to be simple thanks to these easy (and yummy!) recipes!  If you’re blogging What’s Up Wednesday this week, our bonus question is WHAT IS YOUR FAVORITE THING YOU DID THIS SUMMER?

Spinach Enchiladas

Looking for a little meatless Monday?  My Spinach Enchiladas fit the bill!  Not interested in a meatless dish?  This recipe has a tweak for chicken too.

My Peanut Butter and Bacon Burger sounds weird…but it’s DELICIOUS!  My kids were waaaaaaaaaay skeptical, but they LOVED it!  It’s one of those weird ones that everyone will love.

Jalapeno Peach Chicken

My Jalapeno Peach Chicken is all about the sauce. If you think it’s too spicy for your kiddos, then serve theirs with ketchup instead.  Crispy chicken, yummy sauce, delicious dinner.

Banana Cream Pie

Banana Cream Pie with a Nilla Wafer Crust is very popular over at the Shull house.  It’s like a pie and banana pudding got married and had a baby 🙂 .

Greek Pasta Salad

And one last recipe for the week…my Greek Pasta Salad!  This makes the perfect lunch, side or light supper.

    Girl!! How do you do it?? I am a creature of routine, I know you are too! How are you so flexible and fun with getaways? I need to know your secret because we have a crazy (but so fun) next couple of weeks ahead of us, and I’m wondering how I’m going to be able to do it all! 😉😜

      Honestly? I stress myself over-preparing 🙂 . I am SUCH a creature of routine, so I’ve reallllllly planned this out and by doing that fussed/worried about a lot of details that probably do not matter at all.

      Goodness, surely there is one! I have worn that darn dress so many times! I’ll look. I bet it’s in a Friday Favorite or What’s Up Wednesday from the summer of 2016 (when I bought it).

    Can’t wait to hear about Nantucket! Too funny we wlice in a small town called Apex and we have a really cute downtown Area with shops and restaurants and one of our little pubs called Salem Street Pub sells a burger called “my wife said it would never sell” and it has bacon and PB on it 🙂 My husband loves it!

    Salmon and avocado… YUM! Anxiously awaiting your Nantucket trip recap. After going to the Vineyard for nearly 20 years, we ventured to Nantucket this spring and have already been back this summer. It’s our NEW happy place. We followed your last guide and LOVED everything + we rented a Jeep and drove out on the beach…Shay, we saw SEALS. Up close! So fun. Happy & safe travels on your next adventure!
