These are my FAVORITE meals! Everything goes into one skillet and dinner is done! So easy, so full of flavor, feeds a crowd and family approved. What more could you want? In my opinion, this is the epitome of a weeknight supper. Happy eating! xo
This recipe serves four.
Shopping List
1 pound of ground turkey
Extra Virgin Olive Oil (EVOO)
salt and pepper
1 green bell pepper, chopped
1 onion, chopped
3 cloves of garlic, chopped
1 (8 oz) can of tomato sauce
1 (14 oz) can of diced tomatoes
1 to 2 tablespoons of hot sauce depending on how much oomph you want to give it
4 cups of cooked and ready to eat rice (we used brown rice)
chopped parsley to garnish, optional
In a large skillet over medium-high heat, brown up your ground turkey in a drizzle of EVOO. Once browned and crumbly, add in a big pinch of both salt and pepper followed by your chopped bell pepper, onion, garlic, tomato sauce, diced tomatoes and hot sauce. Reduce the heat to medium-low and stir everything together and allow to simmer about 5-8 minutes. Stir your cooked and ready to eat rice right inside the skillet. Remove from heat and sprinkle with parsley before serving.

We have tons of fresh tomatoes from the garden so I am thinking of using fresh instead of canned for this and then also maybe another option could be ground chicken? Thanks for the quick and easy dinner idea!

I love tomato-based food (tomato sauce pasta over creamy pasta any day!) and rice (I’m Chinese after all, lol!), so this sounds perfect! The addition of turkey is great as well, such a healthy protein. 🙂
