Grilled chicken is a big deal at my house. Everyone loves it…except for me. I just cannot get excited about grilled chicken. It’s a shame too because the other five really do enjoy it. So…on the nights I oblige them and we eat grilled chicken, I have to spice mine up a bit. On this particular night, I made a quick Cherry Chipotle Salsa to put on top. Because if I’m going to eat boring grilled chicken, I want it topped with something flavorful. Happy eating! xo
This recipe serves about 4 to 6.
Shopping List
4 chicken breasts
Extra Virgin Olive Oil
Salt and Pepper
poultry seasoning
1 (14 oz) can of diced tomatoes, drained
1 (8 oz) package of frozen cherries, thawed
the zest and juice of one lime
1 small can of chipotles in adobo sauce (you won’t use the whole can!)
a handful of parsley or cilantro, chopped
Preheat your outdoor grill or indoor grill pan to medium-high heat.
Drizzle some EVOO on top of all four of your chicken breasts followed by a good pinch of salt, pepper and poultry seasoning. Rub that around each breast and place on your grill. Grill up about 8 minutes or so on each side.
While the chicken is grilling, make your salsa. In a mixing bowl, combine your can of diced tomatoes (drained), thawed cherries, lime zest and juice, 2 chipotle peppers (chop them up) plus about a tablespoon of the sauce from the can along with your chopped parsley or cilantro. Take a fork and lightly mesh this stuff together just a bit (you don’t want it to break up too much). Cover and refrigerate until you’re ready to serve.
Once your chicken is grilled to perfection, plate and then top with your salsa.
No one should eat just boring chicken 🙂 .

You should try my husbands lime chicken recipe! It’s really flavorful!! Just chicken breast, dales marinade, lime and cilantro. Salt, pepper, squeeze lime juice and place in ziploc with marinade. Add cilantro and rest of lime. Marinade and grill:)
