Maple syrup plus a little Dijon mustard, some shredded cheddar, green onions and crumbled breakfast sausage? Um, yeah…these were good.
I made these for my Sunday school class to enjoy for breakfast and they were gone super fast. Whether you enjoy them in the AM or as an appetizer in the PM, you should just go ahead and enjoy them STAT!
This recipe makes about 3 dozen bites.
Shopping List
1 pound of breakfast sausage
Extra Virgin Olive Oil
1½ cups shredded cheddar cheese (I used a sharp white cheddar)
2 tablespoons maple syrup
1½ tablespoons Dijon mustard
about 8 green onions, chopped
3 (12-count each) boxes of mini Fillo shells (found in the freezer department)
Preheat oven to 350 degrees.
In a large skillet over medium-high heat, brown up your sausage until it’s crumbly and cooked through. Next, stir your shredded cheddar right down in the skillet and stir until the cheese is melted with the sausage. Next, stir in your maple syrup, Dijon mustard and chopped green onions and allow everything to heat up just a few minutes.
Finally, remove your sausage mixture from the heat and start to fill your Fillo shells. Add about a tablespoon of filling to each one. Place each shell on a baking sheet. Once all of your shells are filled, pop your baking sheet in the oven and bake about 10 minutes. Remove from oven and serve immediately.
So many yummy flavors come together in one simple bite!

I would put them out hot when you’re ready to put the food out and then not leave them out more than an hour…that being said, they’ll be gone in 2 minutes 😉 .
