These little egg cups are going to change your life! Not only are they simple to whip up (and versatile too!), but you can pop them in the freezer and then in the morning, pull as many as you like out, microwave them for 30 seconds and bam…your family is fed! I used chopped turkey bacon and green onions but you can use whatever you love…browned sausage, turkey, pepperoni and any combination of veggie you like. Bonus, you can omit the meat and veggies altogether and just keep this a simple egg and cheese cup. Your kids will love this!
This recipe makes 12 breakfast cups.
Shopping List
12 eggs, lightly beaten
about 6-8 slices of cooked bacon, crumbled
about 4 green onions, chopped
½ cup cheddar cheese, shredded

Preheat oven to 350 degrees.
Line a 12 cup muffin tin with cupcake liners.
In a large bowl, combine the eggs, bacon, green onions and cheese. Fill each muffin cup 2/3 full of your mixture.
Bake 25 minutes.
Remove from oven and cool about 5 minutes before removing from muffin tin and either serving immediately or freezing.

@Jen – I’ve used this recipe. I double the batch and use whatever veggies I have (usually spinach). Mix in my blender and pour into the silicone egg bite molds. I stack 2 molds at a time on my trivet (you can buy them on Amazon). I have made this a few times for the exact reasons you mention; however, what is your trick to get them to separate from the cupcake liners more easily?! I am wondering if silicon cups would be better. Have you tried that?

I have tried making these both ways in a wrapper and also silicone pan. Neither has worked well for me. My husband actually asked me not to make them since the egg was so hard to get off the pan and the cup cake wrappers there was so much left on the wrapper. I have tried the silicone pan plain and sprayed too. Hmmm I want these to work so bad!
