Mmmmmm…I love a fish sandwich!
In fact, my favorite ways to eat fish are on a sandwich or in a taco. I just like it with “stuff”. On this night, we grilled up yummy cod and served it on toasted buns with lettuce, tomato and your basic tartar sauce…with jalapeno and chopped green onions stirred in. This isn’t really even a recipe…it’s just a great dinner idea!

This recipe serves four.
Shopping List
4 pieces of cod
the zest of one lime
salt and pepper (we love Kosher or sea salt)
½ teaspoon chili powder
4 nice pieces of lettuce
1 big tomato, sliced
your favorite tartar sauce (see mine below)
1 jalapeno, chopped (I removed the seeds so it was less spicy)
3 green onions, chopped
4 burger buns, lightly toasted
Preheat your outdoor grill or indoor grill pan to medium-high heat.
Meanwhile, take each of your four pieces of cod and sprinkle down the lime zest, salt, pepper, and chili powder (just a little bit on each one both front and back). Grill up your cod about 4 minutes or so on each side (they’ll grill up quickly!). While you’re grilling your fish, prep your tartar sauce. I love this one the most…
…from Trader Joe’s because it has dill and jalapeno already in it. BUT, I like to add a bit more for texture and taste. Stir about half a jar into a bowl followed by your chopped jalapeno and green onions. Stir together and set aside.
Once your fish is off the grill, assemble! Bun, lettuce, tomato, cod and a nice dollop of your jazzed up tartar sauce.
Folks, that’s one simple supper!

Super mild!!! In my opinion, it’s the easiest fish to get kids to eat!!
