It’s the most wonderful time of the year! And for us, that always includes overnight guests and yummy breakfast casseroles. I could eat a breakfast casserole every single morning. It’s just absolutely one of my favorite things to enjoy. The best part about this one is that you can assemble it the day before and then just bake it off the next morning. This would be perfect for Christmas morning!

Description
Breakfast casseroles are always perfect to assemble the night before and then bake off the next morning. Whether you need a recipe for Saturday brunch or overnight company, this one will be a hit!
Ingredients

1 can of Crescent Rolls

1 pound pork breakfast sausage (I used Owen’s)

6 eggs

½ cup milk (I used 2%)

1 (4 oz) can chopped green chiles
-
good pinch of Salt & Pepper

1½ cups of Cheddar cheese, shredded
Instructions

Preheat your oven to 350 degrees.

Spread your Crescent Roll dough across the bottom of a greased (I use Pam) 9×13 baking dish. Make sure to press down on the seems so that it’s completely covering the dish. Set aside.

Brown up your sausage in a skillet over medium-high heat until it’s browned and crumbly.

Meanwhile, whisk your eggs in a small bowl with milk, chopped green chiles and S&P. Once your sausage is browned, spread it out over your crescent roll layer in the pan. Pour your egg mixture on top of the sausage and sprinkle cheese on top of that.

At this point, you can cover and refrigerate until you’re ready to bake it the next morning or you can go ahead and pop it in the oven for 25 to 30 minutes. The edges will be brown and the center not wobbly when it’s done.
- Remove it from oven and allow to cool about 5 minutes before slicing and serving.
Notes
You can assemble this the day before and then bake it the following morning. This recipe also makes a delicious dinner too!

This is THE BEST breakfast casserole! We make it a lot! It’s our Christmas morning breakfast (along with cinnamon rolls) but also just for weeknight dinners. I don’t use the green chilies. I love this recipe!

This sounds delicious! We make one using 2 cans of crescent dough, a roll of sausage, a brick of cream cheese, and a bag of shredded cheddar cheese. Brown the sausage, add cream cheese until all melted together. Layer one roll of crescent dough in greased 9×13 pan. Add sausage/cream cheese mixture. Top with shredded cheddar cheese and the remaining crescent dough. Bake according to the crescent roll directions or until the top layer of crescents is browned.

We make a variation of this every time we have guests for holidays or we need a breakfast we can reheat. I haven’t used chiles, but other sauteed veggies that you might put into an omlet. Sometimes you can find the crescent roll sheet which makes it even easier! Yum!

Yum! I’m going to make that bfast casserole this year. I usually make it with frozen hash browns, sausage, eggs, cheese but the crescent rolls sound ?. Do the green chiles make it hot/spicy?
