In honor of Easter this weekend, I’m sharing our favorite Easter recipe…BUTTERY PEEP BARS!
Last year, Kensington and I decided that these are our very favorite bar. Ever.
I know.
But truly, they are.
I don’t even love Peeps, but I love, love, love these delicious little bars. They slice like a brownie, but they’re buttery like a shortbread cookie with a hint of pink and creamy goodness from our Peeps. You need to make these before Easter gets here!!
This recipe makes one batch of bars in a 9×13 baking dish.
Shopping List
1 cup of butter
3/4 cup of white chocolate chips
4 eggs
2 cups of sugar
2 cups flour
pinch of salt
1 package of Peeps (I used 15 Peeps)
Preheat oven to 350 degrees.
Grease (I used Pam) a 9×13 baking dish. Set aside.
In a microwavable bowl, melt your butter and white chocolate chips together stopping to stir every 30 seconds. Once melted, set aside to cool slightly.
In a mixing bowl, beat your eggs with your sugar. Next, beat in your melted white chocolate/butter mixture. Then, beat in your flour followed by your salt. (Try not to over-mix the batter. Just beat until everything is incorporated.) Pour half of this mixture down into your prepared baking dish, and then place your Peeps on top. Next, pour the other half down over your peeps (the batter is thick, so I dolloped it on and then smoothed it around with my spatula).
Pop this in the oven and bake about 30 minutes or until a toothpick inserted in the middle comes out clean.
Remove bars from oven and cool just slightly before enjoying.

So funny – we just made these yesterday! I had printed out the recipe last year I guess but hadn’t made it before. I have one kiddo who likes only white chocolate and one who likes only semi-sweet chocolate, so we actually made half a pan of each and it worked out fine. Yummy!

Just curious, are you still making recipes like this to be made gluten free? If so, are you switching out the flour and with what? Also, does your daughter have any other intolerances besides the gluten?

She only has a gluten intolerance and we’re still “tweaking” new recipes (especially baked one!).

These did not work for me! Like many others in years past said… did not cook in the middle! Avid baker and followed the recipe to a T!

Maybe you needed to cook them a bit longer? They’re totally soft in the middle because of the Peep…very much like a gooey butter bar!!

Try making your own gluten free flour blend (glutenfreeonashoestring.com)
Honestly though, eventually you’ll all just forget what gluten tastes like and gluten free flours won’t taste so bad. That’s the only way I adjusted.
But flour blends, primarily with white rice flour are the better tasting ones. The robinhood one is awful.

I just put these in the oven. I bought the little chick Peeps but I should have bought the bunny Peeps since they lay flat. My little chick heads are sticking out and I don’t have enough of the half of the batter to cover them. Maybe I should have cut their heads off so they won’t stick out. ??♀️ They may not look right but I’m sure they will taste good. ?
