Today, I’m re-posting a recipe that I originally published way back in 2012! We make my mom’s jambalaya all the time, so I thought I’d take an updated pic and share it again with you.
I love it because it’s a slow cooker supper that cooks up everything in one pot. My kids love it because it has all of their favorite flavors in each bite. Who doesn’t love coming home at the end of a busy day to find dinner ready and waiting on them?! For a side, we’ll either have a green salad or I’ll roast up some veggies (like broccoli). Super simple! I hope you enjoy it too!

Description
My mom’s jambalaya is so easy because the slow cooker does all of the work! Your family will love this one!
Ingredients

1 pound chicken breasts, cut into pieces

8 oz sausage links, cut into one inch pieces

1 (14 oz) can diced tomatoes

1 (10 oz) can Rotel

2 (14 oz) cans chicken broth

1 tablespoon Cajun Creole seasoning

1 teaspoon Cumin

1½ cups long grain rice (see below for more details)

a couple of handfuls of frozen shrimp, optional
- chopped parsley or cilantro to garnish, optional
Instructions

In your slow cooker, layer chicken, sausage, tomatoes, Rotel, chicken broth and seasoning.

Cook on low 6 to 8 hours or on high 3 to 4 hours. If you’re using a standard long grain rice (not fast cooking), then one hour before you’re ready to eat, add rice in and cover back up. If you’re using quick cooking rice, then add in about 20 minutes before you’re ready to eat. Add shrimp in the last 10 minutes before you’re ready to eat. You can garnish with a bit of chopped parsley or cilantro (or even basil!) too if you like!

That’s it! Done! As for the sausage, you could use any type you like. I prefer a nice smoky pork sausage but you could use Andouille, chicken sausage, turkey sausage…whatever you prefer.
Notes
If you’re making this gluten-free, make sure you check your rice and verify it’s certified g-free (not all are). Here’s a bonus…you could make this exact meal on the stove-top using the chicken, sausage and shrimp but cheating and using Zatarain’s Jambalaya mix instead of your own rice and seasoning. That’s the perfect, easy week-night supper.

I don’t like it when my cauliflower gets mushy, so make that separately and then just add it together at the very end!

Hi, I am allergic to Shellfish. Is there any substitution for that? How spicy is the creole spice? I am a timid with hot spicy but I do like flavor spices.

Just omit it!! Sometimes, we omit it and double the sausage or chicken. Totally skip it if you need to! And not spicy at all. I would say it’s flavorful but my kids don’t think it’s spicy.

Could you still use the slow cooker if you cheat and sub Zatarains for the rice/seasonings?

Yes! I would just add all of it in at the end where I typically add my rice.

Made this last night and my husband keeps thanking me. 🙂 Growing up, his mom didn’t cook, but his favorite quick meal was a box of Spanish rice mix with hot dogs mixed in. He made it in college and anytime I’m gone, he makes it. He said this tasted just like it, except healthier!

Either! If they’re fully frozen, they’ll just take a bit longer to warm up

You could do either (since it cooks long enough!). Either a fully cooked kielbasa-style sausage or one that hasn’t been cooked yet. Either way, the slow cooker will handle it.
