I often hesitate labeling recipes “gluten-free” because I want my gluten-friendly readers to make things too, BUT in this instance, I’m going to stick that GF on there because, we’ve been making these easy and delicious cookies for several months now and Kensington loves them! If you can consume gluten, totally sub out your cake mix with a regular one, and they’ll be delish too! Either way, nothing says September like a little apple cookie.

- Yield: about 18 cookies 1x
Description
An easy little apple cookie recipe for your fall!
Ingredients
- 1 gluten-free yellow cake mix
- 2 eggs
- ½ cup vegetable oil
- about 6 ounces of regular apple sauce (2 pouches!)
- 1 tablespoon cinnamon
Instructions
- Preheat your oven to 350 degrees.
- Grease a cookie sheet with Pam and set aside.
- In a bowl, beat together your cake mix, eggs and oil. Next, beat in your apple sauce and cinnamon.
- Drop this dough on to your prepared cookie sheet (give them room to spread as they bake) and pop in your oven.
- Bake about 9 to 10 minutes.
- Allow to cool before eating.
Notes
You could obviously sub a regular cake mix if you can consume gluten.

These look great and easy! My husband was diagnosed with celiac last Friday. I’ve spend the week re-reading all of your posts about when Kenzie was diagnosed and transforming your kitchen. Thank you for sharing! It has been so helpful this past week! 2 things we are struggling with- a good GF wrap. My hubby eats turkey wraps for lunch every single day and so far the GF ones have been disappointing. And 2- a GF coffee cake (it’s our Christmas morning tradition and I’m already nervous about ruining it)

Oh goodness, I’m so sorry that you guys are going through this. I will say that wraps are not the same g-free. We have been using Trader Joe’s GF tortillas and they’re pretty good (not like ‘normal’ though). I’m sorry!

My daughter is GF and we found some amazing GF tortillas made out of coconut flour. The lady is just at a booth at a farmers market in the parking lot of Willowbend mall in Plano on Saturday mornings. (I think it is on the NW corner of the mall). You have to try them!! In my opinion, they are so close to real tortillas! Her company is called “The Salsa Texan”. Go find her 🙂

I’m shrinking in my chair as I’m typing this because we are just coming off of your podcast about how you and Erika eat well and try to make healthy food choices. However, 🙂 we make similar cookies every year in the fall but we add one more thing. Mix a little powdered sugar and some milk to form a thin frosting. Shay, if you have a cheat day, drizzle some over the cookies and you just might thank me. Yummy, yummy!

I am so thankful for the gf recipes… my daughter is gluten free, and home for the semester, and I was recently diagnosed celiac. Ugh! I think you recommended a four to substitute equally in baking, and wonder if you could share that again.
