Happy Hump Day, friends!
Anyone else constantly looking for hearty, easy and delicious dinner ideas to feed their crew? I LOVE this time of year, but honestly? Dinner is on the backburner. Between football games, soccer practice, volleyball, speech therapy, cheer, homework…you know #allthethings, I like to get home after a fun/long/exciting night of activities to an easy dinner. Bonus points if I can prep it in advance 🙂 .
Tonight’s dinner idea isn’t a new recipe…it’s a twist on one of my CLASSICS!
If you’ve been around here for a bit then you know that MEATLOAF is Andrew’s, my dad’s and my brother’s very favorite recipe. You can see my MOM’S ORIGINAL RECIPE or my slightly tweaked GLUTEN-FREE MEATLOAF for ideas, but basically, this isn’t your average meatloaf and people always love it! I love it too for a lot of reasons, but now as a busy mom of four, I love how easy it is to make in advance on busy school days and just pop in the oven when we get home.
Whether you have leftovers for a subsequent day or just want a new spin on a recipe you make time and time again (like me!), try making these MEATLOAF BOWLS as a fun variation to the classic. Trust me, your peeps will love it too!

Description
An easy twist on the classic recipe! Who doesn’t love a hearty and delicious bowl for dinner on a busy weeknight?
Ingredients
- 1½ pounds ground beef
- 1 cup gluten-free breadcrumbs (you can also crumble up your favorite gluten-free cracker instead!)
- 2 eggs, beaten
- 1 onion, chopped
- pinch of salt and pepper
- 5 tablespoons Worcestershire sauce, divided (make sure it’s g-free!!)
- 1 (8 oz) can tomato sauce
- 1 cup ketchup (make sure it’s g-free!)
- 2/3 cup brown sugar
- 1 teaspoon mustard (I typically use a spicy mustard but a basic yellow mustard works too!)
- cooked and ready to eat white rice (we love frozen Jasmine rice from Trader Joe’s!)
- a few chopped green onions for garnish, optional
Instructions
- Preheat your oven to 350 degrees. Grease (I use Pam) a 9×13 baking dish. Set aside.
- Meanwhile in a big mixing, add in your ground beef, breadcrumbs, beaten eggs, chopped onion, a little pinch of salt and pepper, three tablespoons of the Worcestershire sauce and tomato sauce. Mix all of this either by hand or with a big wooden spoon until combined.
- Next, spread your meatloaf mixture down across your prepared baking dish.
- Pop the meatloaf in the oven to bake about 30 minutes.
- Meanwhile, while it’s baking, take a second mixing bowl and whisk together your remaining Worcestershire sauce, the ketchup, brown sugar and mustard to make a sauce.
- After 30 minutes, carefully remove the meatloaf from the oven and pour the sauce on top. Pop the meatloaf back in the oven and bake an additional 10 minutes or until browned on the edges and bubbly.
- Remove the meatloaf and let it sit about 5 minutes before slicing and serving on top of your cooked and ready to eat rice. Garnish with a few chopped green onions.

Meatloaf has a bad reputation for being dry, bland and boring. No one requests to have meatloaf once a week, but when it gets pulled out of the oven, everyone is excited it is on the table. I can shredded veggies that are about to go bad, make meatloaf “cupcakes” and use mashed potatoes for the icing, and add just about any seasoning and it’s always good. Never thought to put it in a bowl, but with a few other veggies added on top it would make a nice meal.
PS – we had meatloaf one night when we invited a new neighbor over. My husband was like “you are serving meatloaf… out of all of your recipes this is the one you decided on”. The other gentleman took a bite and immediately said he just felt comfortable and at home with a meal like his mom would have cooked. So take that meatloaf haters!

Cannot wait to try these. I made the crappiest meatloaf this week. Will probably need to give my husband a little time to forget it before I mention meatloaf again. But these look scrumptious. Sharing with my family!!
