Back to school season always makes me think of PEANUT BUTTER!
The very first time I made these PEANUT BUTTER BUTTERSCOTCH NO BAKE BARS, my uber healthy eating husband tried a bite, then a second bite, then he ate the entire bar and then he said, “Get those away from me…and also make them for your brother immediately” as the men in my family LOVE them a peanut butter recipe.
These bars check a lot of boxes at my house: they’re gluten-free, they have peanut butter, they have butterscotch, and they’re “no bake” which means even my littlest loves can whip them up in no time.
You will whip these up in no time, and I promise you, after school today, your family will be oh so happy you did!

Peanut Butter Butterscotch NO BAKE Bars

Description
These bars check a lot of boxes at my house: they’re gluten-free, they have peanut butter, they have butterscotch, and they’re “no bake” which means even my littlest loves can whip them up in no time. You will whip these up in no time, and I promise you, after school today, your family will be oh so happy you did!
Ingredients
- 6 cups Rice Chex cereal
- 1 (10 oz) bag of mini marshmallows
- 1 cup butterscotch chips
- 1 cup creamy peanut butter
Instructions
- Line an 8×8 baking dish with foil and then spray down with Pam for easy removal of the bars. Set aside.
- In a large-sized baggie, add in your cereal. Seal the bag and lightly crush the cereal (we use the back of a measuring cup). Don’t crush them too much, just crush them a bit so that about half of the cereal pieces are broken.
- Pour this cereal into a large mixing bowl and set aside.
- In a microwavable bowl, add in your marshmallows, butterscotch chips and peanut butter. Place this bowl in the microwave and microwave until the marshmallows are melted (stopping every 30 seconds to stir). This will only take about a minute or so. As soon as your marshmallows and butter are melted, quickly pour this on top of the cereal in your bowl and combine everything.
- Next, pat this all down into your prepared baking dish.
- Allow the bars to cool before slicing and serving. Keep covered on the counter when not enjoying.
Notes
Two tips!
#1: Flip your baking dish over and form the foil around the bottom of the dish. Then flip it right side up and your foil will fit just perfectly down inside.
#2: Spray a rubber spatula with a little Pam to easily pat the bars flat once they’re in your baking dish at the end.

When I seen these bars this morning, I just knew that I had to make them. Only problem was that I had used the last of my creamy peanut butter Monday when I made the Maple Butterscotch No bake cookies. But….. I did have crunchy peanut butter, so being that I wanted these bars with my coffee, I I made them with crunchy peanut butter. My goodness! These bars are Soooo GOOD!!!!!
