Lemon Coconut Bars

Description
This recipe is super simple, super delicious, and super summery. You should absolutely try it too.
Ingredients
- 1 box of lemon cake mix (do not prepare)
- 4 eggs
- 1 stick melted butter (8 tablespoons)
- 4 cups of powdered sugar
- 1 (8 oz) package of cream cheese, softened
- 2 cups sweetened flaked coconut
Instructions
- Preheat oven to 350 degrees. Grease (I use Pam) a 9×12 inch baking dish. Set aside.
- In a mixing bowl, combine dry cake mix, 2 eggs and melted butter with a spoon. Once combined, spread across the bottom of your pan. This is the “crust”.
- In a second mixing bowl, beat with an electric mixer your powdered sugar, 2 more eggs, and cream cheese. Once combined, stir in your coconut. Spread this coconut mixture on top of crust mixture.
- Pop this in the oven and bake 35-40 minutes until edges are brown and center set (it will still be slightly wobbly in the middle).
- Remove from oven and cool on counter 30 minutes before refrigerating 2 hours or up to 2 days.
- Slice into bars and serve.
Notes
The bars are best served right out of the fridge.
