Kensington and I took our beloved FLOURLESS PEANUT BUTTER COOKIES added Christmas sprinkles and called it a win! They’re delicious, they’re easy, they’re festive, they’re gluten-free, they only call for FIVE ingredients and they’re oh so Christmasy! We have devoured each and every batch.
If you’re in the middle of this busy season and you just want something simple to do…add sprinkles and enjoy.

Ingredients
- festive Christmas sprinkles (we use these)
- 1 cup of creamy peanut butter
- 1 cup of sugar
- 1 egg
- 1 teaspoon baking powder
Instructions
- Preheat your oven to 350 degrees.
- Lightly grease a cookie sheet or place parchment paper down. Set aside.
- Pour about a cup of sprinkles into a small bowl (we use a cereal bowl) and set aside.
- In a mixing bowl, beat together your remaining four ingredients with an electric mixer until creamy. Once the batter has been combined, shape the dough into walnut-sized balls and then roll each ball in your sprinkles before placing them on your prepared baking sheet (not too close together). (We typically get about 18 cookies.)
- Next, take your fork and lightly press down on each cookie in two different directions to lightly flatten them. At the end, if you have additional sprinkles, you can add a few to the tops of each cookie.
- Once your cookies are flattened, time to pop them in the oven.
- Bake for about 8 to 10 minutes.
- Remove from oven and allow to cool about 5 minutes before enjoying.

Do you use a regular creamy pb or a natural one with no oil added? Thanks

I use Jif Natural which is a “regular” one. Stirring in the oil that settles at the top drives me mad.
