Happy Tuesday, friends!
Okay, this year when I asked you ladies what you wanted to see more of here in blog world, so many of you wanted to see actual photos of what I was eating.
I mean…I get it. I too like to see what other people are eating, the inside of their car, what’s in their closet, etc. I get it. We’re all curious and little details like this make us feel more connected. Thus, a new little blog series begins today called “MY PLATE” where I’m legit just going to show you things that are on my plate.
These photos are in real time taken with my iPhone so apologies in advance, but if I’m going to snap in the moment pics, then I need in the moment convenience. I’ve already started taking pics and trust me, it’s a random assortment including a fast food order, an easy lunch and several dinners. I’m not sharing this as “health food” or telling you all to eat just like me, I’m just sharing for the curious minds who are interested.
In today’s edition, it’s a weeknight supper of my EASY MEATBALLS.
Here you go…
On this particular night, I whipped up my EASIEST MEATBALLS (we are VERY into protein over here, so I doubled the recipe and used four pounds of ground beef). When the meatballs had about 5 minutes left in the oven, I spooned a little store bought spaghetti sauce over each one (I used Rao’s Homemade Marinara) and then returned them to the oven for the final few minutes.
My kiddos ate their meatballs with some g-free pasta tossed in a bit of olive oil, but Andrew and I had ours as is along with roasted green beans.
How do I make my roasted green beans? Here you go:
Preheat oven to 400 degrees.
Line a baking sheet with foil (for easy clean up!) and then I placed two bags of frozen green beans on top. I drizzled olive oil over the top as well as some salt and pepper. I popped them in the oven and let them roast about 20 minutes. I removed them from the oven, squeezed a little fresh lemon juice over the top and served.
Easy as that!

I am really *trying* to get 100 grams. That is not always possible, but when I look at my plate, that’s my goal.

Have you made any changes to your meat intake after reading the Blue Zone? I feel best when I eat less meat but then struggle to get enough protein- can only do so many beans without getting way too many carbs.

Dang 4 pounds of ground meat for 6 people seems like a lot – do you have leftovers or do y’all eat leftovers? Do you usually do ground beef or turkey?

Sometimes we do! I feel like Andrew and Smith each eat more than a pound of it. We do enjoy ground turkey from time to time, but we eat much more ground beef (96/4).

My 20-yr-old easy eats a pound of ground meat for *breakfast* – along with a couple/few eggs. UGH. I can’t get over how much food growing boys need. . .when he was home over break this time we literally could not keep the fridge stocked for all the MEAT he was consuming – he and his siblings are *really* “into” protein too. It’s a LOT. I use 3 pounds of ground meat when I make meatloaf (but really 6 lbs b/c they would be mad if there weren’t leftovers) so I get it. There are 6 of us too.
This will be a fun series!

I cook my green beans the same way. However instead of lemon juice I drizzle a little bit of balsamic glaze over the top when cooked and toss. Delicious!

We had meatballs with tortellini on Sunday night. Such an easy, quick meal. I also made extra meatballs to have food already made for my baby’s daycare lunches this week 🙂

Just curious, do you cook with the venison that Andrew gets from hunting? My husband hunts and the only ground beef we eat is the venison but it can be tricky to use in some recipes because it is so lean. I am thinking this recipe would work great though!

I do not. I am not a venison person myself (I just don’t love the taste of it), but we have a friend whose family loves it, so they are the ones that take the meat when it’s processed.
