It’s another edition of ON MY PLATE!
As a reminder, this is where I share random iPhone pics of what’s literally on “my plate”.
This one was really easy, and I almost didn’t snap a pic but the whole point of “my plate” is to legit show you the easy things I put on my plate.

…BREAKFAST TACO 🙂 .
I eat this for lunch myself all the time (as pictured here), but I make them for my kids for breakfast too.
Truly, this is the easiest (it’s just my EASY EGG SCRAMBLE with a cheesy tortilla and salsa!).
Here’s what you do…
1: I put three pieces of turkey bacon in my skillet to crisp up.
2: While that’s happening, I scramble four eggs in a bowl and stir in a drizzle of olive oil and a pinch of both salt and pepper.
3: I remove my bacon from the skillet and while it’s cooling a bit to the side, I sprinkle some grated cheese down in the skillet and immediately place a flour tortilla over it. Let this hang out about 60 seconds before using a spatula and removing it to your plate. The cheese will have melted on the tortilla, and it’s the perfect “wrap” for the scramble. The cheesy side will face up.
4: Next, I use my kitchen shears and snip the bacon into pieces right over my bowl with the eggs. I also snip some green onions over my bowl too. I give it a stir and then pour this egg mixture back in the same skillet.
5: As my eggs are cooking up, I either remove half an avocado from my fridge (leftover from earlier that morning or the day before) or I slice a new avocado in half.
6: I scramble those eggs, add them to my plate along with my half an avocado and a side of salsa.
You guys, this entire thing comes together in about 6 minutes. It’s easy enough for school mornings and really delish for a lunch.

Now that we aren’t g-free, I just use a basic flour tortilla. Texans are pretty picky about their tortillas. I like to buy them from the bakery department of my grocery store when I can, but if not, I just make sure I buy a brand that has “soft” ones.

How do you keep the other half of your avocado from turning brown after you have cut it?😊

If you wrap it really tight in Saran wrap and put it in the fridge, it will typically not turn on you. Make sure the Saran wrap is touching the avocado. It needs to be tight.
