Happy Meal Planning Monday, friends!
We have had a snowy and cold weekend here in North Texas which means…we’ve been inside cooking and baking allllll the yummy food while we played cards and watched movies. It was a great way to spend a January weekend. I’m going to keep the cozy going this week with five cozy and delicious winter suppers that go from pantry to table in no time.
From my snowy kitchen to yours, have the best start to your Monday! xx

Can you even be “snowed in” without making a roast? I think not! My mother-in-law’s BEST SLOW COOKER ROAST is just that…the best! This recipe was one of the TOP 10 RECIPES HERE ON MY BLOG IN 2025!
My kids LOVE when I make SLOPPY JOE POT PIES! It’s just so simple, really hearty, and always delicious!

I started thinking about this very old but VERY goodie recipe from my friend Kelly. I first published it 12 years ago! This is her REALLY easy BEEF ENCHILADA recipe and trust me when I say, it’s one you’ll make again and again.
My CREAMY CHICKEN CORN CHOWDER for the win this Thursday! You put everything in the slow cooker first thing in the morning and then that night, dinner is done!
Speaking of the slow cooker…

…this week is a great time to try my EASY WEEKNIGHT SLOW COOKER TACOS! They are the perfect way to wrap up a Friday!

If you’re looking for something sweet this week, my CINNAMON PECAN MUFFINS are great for breakfast, the lunchbox, or even dessert.
If you’re looking for something savory…

…you must must try my SAUSAGE & BACON BREAKFAST CASSEROLE! This recipe right here was the 8TH MOST VIEWED BLOG POST IN ALL OF 2025 (out of 465!). This is a fabulous breakfast or brunch…but it works for an easy dinner too. Bonus, you can make it way ahead and just bake it off when you’re about ready to eat!
That wraps up this Meal Planning Monday!
I hope you all have the BEST day! xx
