Dinner Tonight: Crock Pot Chicken Tacos

Is this a recipe?  No.  This is just a super simple way of getting tacos on the table ASAP.  You probably already do this, so humor me if you do.  You know I love me some slow cooker recipes and I also love me some quick dinners…this is both.
Shopping List
1 pound chicken breasts
2 cups salsa
1 can black beans, drained
1 can chopped green chiles
2 tablespoons chili powder
1 cup frozen corn
Tortillas
Garnish with cheese, guacamole, sour cream and/or green onions
Place chicken breasts, salsa, beans, green chiles and chili powder in slow cooker.  Cook on low 6-8 hours or high 3-4 hours.  The last 30 minutes, add in corn.  When ready to serve, take two forks and shred chicken right in slow cooker.  Top tortillas and go.  Dinner’s ready.
What we really like to do is when I add the corn the last 30 minutes, I add 2 cups of cheese in too.  Put the lid back on and let it finish cooking.  Then the tacos are all cheesy and melty when you put them on the tortilla.  However, on this particular evening, I was making them for my dad who doesn’t care for cheese (pause for your astonishment!), so we topped our tacos individually with cheese.
Secondly, we always buy the fresh tortillas from our grocery store’s bakery.  They are just sooooo much better.  We use whole wheat but you could certainly substitute corn or flour.  Your family will love coming home to taco night.

Hi Shay! Do you know how many this serves? I'm hosting a book club for 10 girls and think this sounds perfect! Thank you.

Each entree serves four adults unless otherwise stated. This would be so simple to double! Enjoy!!

When meals call for frozen corn can you substitute it with regular canned corn? I just never use frozen corn…

  • Mix and Match Mama September 10, 2014 at 10:41 am

You can use canned corn (drained). Enjoy!

    Is the chicken pre cooked?

  • Mix and Match Mama September 10, 2014 at 10:48 am

Nope, just throw your uncooked chicken in the slow cooker and wait until dinner to enjoy!

Shay, Do you line your crockpot or do you just throw everything in? What do you line it with?

    Thanks!

  • Mix and Match Mama September 10, 2014 at 5:33 pm

You can line it with a slow cooker liner or you can just throw everything in. Enjoy!

[…] This tacos were so good! We put them on high for about 3.5 hours and they were perfect when they came out! They were a little juicy but the flavor was amazing! You can find the recipe here. […]
