Is this a recipe? No. This is just a super simple way of getting tacos on the table ASAP. You probably already do this, so humor me if you do. You know I love me some slow cooker recipes and I also love me some quick dinners…this is both.
Shopping List
1 pound chicken breasts
2 cups salsa
1 can black beans, drained
1 can chopped green chiles
2 tablespoons chili powder
1 cup frozen corn
Tortillas
Garnish with cheese, guacamole, sour cream and/or green onions
Place chicken breasts, salsa, beans, green chiles and chili powder in slow cooker. Cook on low 6-8 hours or high 3-4 hours. The last 30 minutes, add in corn. When ready to serve, take two forks and shred chicken right in slow cooker. Top tortillas and go. Dinner’s ready.
What we really like to do is when I add the corn the last 30 minutes, I add 2 cups of cheese in too. Put the lid back on and let it finish cooking. Then the tacos are all cheesy and melty when you put them on the tortilla. However, on this particular evening, I was making them for my dad who doesn’t care for cheese (pause for your astonishment!), so we topped our tacos individually with cheese.
Secondly, we always buy the fresh tortillas from our grocery store’s bakery. They are just sooooo much better. We use whole wheat but you could certainly substitute corn or flour. Your family will love coming home to taco night.
