I love this recipe because I can count approximately 4,856 ways I can mix and match it. This recipe is a method verses just a recipe (and you know how I dig a method!). I also love this recipe because it is simple, the ingredient list was short, it was assembled in minutes and tasted so, so yummy.
Shopping List
1 box yellow cake mix, divided
4 eggs, divided
1/2 cup butter, melted plus another 3 tablespoons butter softened
1 can pumpkin
1 cup sugar, divided
1/4 brown sugar
2 teaspoons cinnamon
1/2 cup chopped candy corn, caramels and/or pecans
Preheat oven to 350 degrees
Lightly grease a 13×9 inch baking dish. Reserve one cup of cake mix to the side; mix remaining cake mix, 1 egg and half a cup of melted butter. Mix well and then pat into prepared pan to form a “crust” layer.
In a large bowl, combine pumpkin, 3 eggs, 1/2 cup sugar, brown sugar and cinnamon with electric mixer. Pour over crust.
In a small bowl, combine reserved cup of cake mix, 1/2 a cup of sugar and softened butter. Crumble over cake. Sprinkle candy corn, caramels (which is what I used) and/or pecans over top. Bake 40-45 minutes.

I made this tonight and it is delicious but I am a little worried about the middle. Should it be a little mushy or more like cake?

It shouldn't be super mushy in the middle. It should cut into nice squares. You might not have cooked it long enough.
