Tab’s Guacamole is my favorite. I really think my last meal could be a big bowl of tortilla chips and this guacamole. Seriously. I. love. it.
Tab (my sweet friend Erika’s) hubby made this for me years ago and it’s my fave. Ok…I know…it’s pretty much just a basic guacamole recipe but he was technically the first person to make it for me and give me the recipe, so he gets full credit :). I’m giving this recipe to you know because many recipes in the future will include this as a side/topping…so you need to know it today!
Shopping List
2 avocados, pits removed
1/2 red onion, chopped
1 clove garlic, chopped
1 jalapeno, chopped
1 tomato, chopped
lots of salt (I love Kosher or Sea Salts the best!)
In a medium size mixing bowl, combine all ingredients. Using a fork (or I use a potato masher), mash the mixture to desired consistency (I prefer a chunky mixture…but you can totally mash this smooth if you prefer). Add more salt as needed depending on your love of salt.
That’s it! I don’t seed my tomatoes, I just slice them in half and cut them up. So yummy! So, so, so yummy!! Thanks Tab!

If you squeeze in a lime, it will keep the guacamole from turning brown.

I like to used canned pickled jalapenos in my guac because they are much more flavorful and the vingegar used in them keeps the avocado from turning brown.

Hi Shay!
I made this tonight to go with my chicken quesadillas. I had a leftover ear of corn that we grilled last night with our burgers, so I cut it off the cobb and threw it in the guacamole too. It sent it over the top! So, so good! I didn't even make it to the quesadillas!

This would really only serve 4 people. I would recommend 1 avocado for every 2 people…so, you sound need to make a really big batch!
