A pasta that tastes like a taco? Say it ain’t so!
I’ve seen several of these types of recipes floating around Pinterest, so I thought I’d create my own. This was really yummy (and super simple to make!). Dig in!
Shopping List
1 pound ground beef, chicken or turkey
1 package taco seasoning
3 ounces cream cheese
2 cups taco sauce (or salsa if you have it)
1 cup frozen corn
1 cup cheddar cheese
1 cup Monterey Jack cheese
1 pound pasta
Green onions and/or sour cream to garnish
Extra Virgin Olive Oil (EVOO)
Preheat oven to 400 degrees.
In a large skillet, add a few tablespoons EVOO over medium-high heat. Brown ground beef until crumbly and cooked. Meanwhile, bring another large pasta pot up to a boil. Drop pasta and cook to al dente. Drain and reserve.
After your ground meat is finished cooking, reduce heat to low and stir in taco seasoning and cream cheese. Cook until cream cheese is melted and incorporated. Stir in taco sauce, corn and half of both cheeses. Add hot pasta and toss until incorporated.
Pour mixture into an 8 x8 inch baking dish. Top with remaining cheeses. Cover with foil and cook about 15 minutes. Remove foil and cook another 5 minutes.
Remove from oven and garnish with sour cream and/or green onions.
So simple! This would make a great freezer meal or pot luck too. Enjoy!

Hi Shay! I'm planning on making something like this recipe this coming week. I have a HUGE amount of taco seasoning that I got at the farmer's market, and was wondering what you thought the equivalent would be for one packet? Thanks dear!! xx

Making this for dinner tonight! It looks and smells yummy! My only glitch was there was no way it would fit in an 8×8 baking dish–I had to use a 13×9. Am I the only one with this issue? Thank you for such a delicious dish!
