Quiche was a dinner staple growing up. Quiche with a salad. Yes, it can totally be breakfast or brunch but it so delicious as a supper too. It’s easy to assemble, you can make it in advance and just pop it in the oven when you’re ready to eat. Quiche…it’s what’s for dinner.
Shopping List
4 eggs, beaten
1 1/2 cups milk
1 can chopped green chiles
1 package of frozen spinach, thawed and all of the water squeezed out
1 green bell pepper, chopped
1 cup cheddar cheese, shredded
1 cup Swiss cheese, shredded
4 Italian sausage links (I used chicken sausage…use whatever you like), diced and browned
1 refrigerated pie crust, brought to room temperature
Preheat oven to 350 degrees.
Fit a pie plate with one sheet of your pie crust. Set aside.
In a medium bowl, combine eggs, milk, chiles, spinach, bell pepper and cheese. Fold in sausage. Pour egg mixture into unbaked pie shell and bake about 45 minutes. Remove from oven and let stand 10 minutes before slicing into wedges.
I always sit my quiche on top of a baking sheet in the oven in case there is any bubbling over…this make for easy cleanup.
If you don’t want to use sausage, you can use bacon pieces, ground beef or ground chicken already browned and crumbled. Quiches are so versatile…just Mix and Match whatever you have in the fridge. Dinner (or brunch) is done!

This looks delicious! We love breakfast for dinner, but I haven't thought about making quiche! Having it with a salad would be perfect & a bit of a lighter summer meal! Thanks for the great idea:)

LOVE quiche and my mom used to make it for us growing up, too. This is a perfect "mix-and-match" recipe since you can use it with whatever meat, cheese and veggies you have on hand …. one of those "clean out the fridge" types of recipes. Thanks!
