This method is a Mix and Match lovers d-r-e-a-m. This is the simplest little thing to do and you can change it up a thousand different ways. My sweet friend Carol made this one time for my Grandmother and then my Grandmother made it for me and now, I’m making it all the time. And the best part, there are only 3 ingredients. That’s it. Three.
Shopping List
1 frozen key lime pie, thawed
1/2 gallon ice cream, slightly softened
Cool Whip
In a large mixing bowl, crumble in your thawed out pie. Add your ice cream to your pie mixture and combine. Spread the pie/ice cream mixture into a 13×9 inch baking dish and freeze at least 20 minutes or up to 2 days.
Remove from freezer about 5-10 minutes before you’re ready to serve and top with Cool Whip.
Did you catch that? All you’re doing is combining ice cream with a ready made pie from the freezer department. Once you crumble the pie up and combine it with the ice cream, you get these awesome bits of pie in every bite of your ice cream “cake”. And talk about mixing and matching…you could do a chocolate pie with chocolate ice cream, a pumpkin pie with cinnamon ice cream, an apple pie with caramel ice cream, a peach pie with strawberry ice cream…I could go on and on and on.
Go ahead and start mixing and matching…this ice cream cake is a winner every time.
