This might be my favorite pie. Ever. It’s not only super simple, it’s just soooooooo delicious as well. My grandmother strikes again with another fab recipe. What would I do without my Grandmother? (Who by the way, doesn’t think she’s a cook…she’s wrong.) Summer can’t end without you trying this pie. Trust me.
Shopping List
1 prepared pie crust, baked and ready to go (I just use a Pillsbury crust and pop it into the oven)
1 (3 oz) cream cheese
the juice of 1 lemon
1 1/2 cups sugar
1 large Cool Whip, thawed a bit
2 bananas, sliced
Sliced strawberries to top (probably 10 or so)
In a medium sized bowl, combine cream cheese, lemon juice and sugar with a wooden spoon. Fold in Cool Whip. Lay sliced bananas across the bottom of your cooked (and fully cooled) pie shell. Top banana slices with your Cool Whip mixture. Lay sliced strawberries across the top. Refrigerate at least 12 hours (if not, your sugar won’t dissolve in your pie and it will be grainy tasting). Slice and serve.
This is the perfect accompaniment to a pool party. Or any party. Or a lazy afternoon. This pie is good for breakfast. It’s always good.

I have recently stumbled upon your blog and love love love it! I am making the strawberry banana pie at this moment! I do have 2 questions for you….1. Since you get up at 4:50, do you take a nap during the day? 2. How do you keep so skinny with all this yummy food that you make?

Hi! I have always been a morning person. I don't nap but I do go to sleep by 10:30 every night. I never stay up late! As for what I eat…I am a big believer in moderation. If I want dessert, I'll have some. I never deny myself stuff because that only makes me want it more. I also exercise 4 or 5 days a week, never eat fast food and don't drink sodas. That's my diet :). Making this right now! 3 oz is less than half the package? Is it 8 oz of cream cheese? Help! 🙂

Philadelphia makes a 3 oz cream cheese package but if you can't find that, then yes, use about half of an 8 oz package.

Do you think it would work ok if I do banana slices on the bottom, then 1/2 the cool whip, more bananas, and then the rest of the cool whip? Just wanted to figure out a way to add more fruit to the pie :-)) thanks!

Your pie will be full but add as much fruit as you like!

Hi Shay, Quick question…. how do the strawberries not bleed on the whipped cream overnight? Should I wait to add the strawberries prior to serving? Thanks.

I would make it as directed. The strawberries will be fine. Just make sure they're dry when you place them on top.
