Well…well…well…this recipe has a little story.
I first found this recipe when I was cruising around on Pinterest one day. I went and bought all of the ingredients and was super excited to make them. You see…they seemed like the perfect combination of three of my favorite desserts…Neiman Marcus Bars plus Peanut Butter Rice Krispies Treats plus Candy Corn Cupcakes all in one. How fabulous is that?! That night, I went and met up with some girlfriends and my girl Rachel New (you know, you know, her!) said that she had tried to make these bars twice and they didn’t turn out pretty. Crazy coincidence, right? She was lamenting over the same bars I was so excited to make. This was so sad for Rach but so good for me…I was able to pick her brain about what exactly went wrong the two times she made the bars and then perfect the problems. The next day, I whipped up these babies. Pretty darn good, right? I just couldn’t have done it without Rachel and her tried and true tips. Actually, I wouldn’t have ever done this blog without that sweet friend, so once again, I owe it all to her. XOXO
These taste soooooo good! And they’re really pretty easy to make. Just follow my tips and you’ll be eating in no time.
Shopping List
1 stick butter, melted
1 box yellow cake mix
2 eggs
3 cups mini marshmallows
1 cup light corn syrup
1/2 cup sugar
1/2 cup brown sugar
1 cup creamy peanut butter
2 teaspoons vanilla
2 cups Rice Krispies Cereal
2 cups salted peanuts
1 cup candy corn
Preheat your oven to 350 degrees.
Grease a 13×9 inch baking dish with Pam.
In a bowl, mix butter, cake mix and eggs with an electric mixer. Pat mixture into prepared baking dish. This is going to be your “crust”. Bake 15-16 minutes or until lightly brown. Remove from oven, sprinkle marshmallows over the top and return back to oven for an additional 3 to 4 minutes. Remove from oven.
Meanwhile, go ahead and pour your cereal, peanuts and candy corn into a large bowl. Set aside.
Over medium-high heat on your stove top, bring corn syrup, sugar and brown sugar to a boil. Only boil about one minute. Remove from heat and immediately stir in peanut butter and vanilla. Immediately pour this peanut butter mixture down over your cereal/candy mixture. Toss quickly to coat and then pour everything on top of the marshmallow layer of your bars. Working quickly, spread the Rice Krispies layer over the marshmallow layer. Set aside to cool about 30 minutes before slicing into bars.
That’s it! It was really not that complicated (thanks to Rachel!). The key here is to have everything measured out in advance and to move really fast. Once that Rice Krispies layer starts to set, it will be impossible to spread over your marshmallow layer. A fabulous ending to a fall dinner :).
