Andrew is always a happy eater. He’s always sweet and appreciative of everything I make…he’s also really honest, and occasionally, I make things at home that he’s not too crazy about and those recipes never make it to the blog. He is my ultimate taste-tester.
Well…the other night, I kind of threw this recipe together. It was super easy, took no time at all, and really quite simple…I served it up and Andrew ate it all. Then he went back for more…and then more…and then told me it was one of his favorite meals ever. Whoa. A favorite meal should be something complex…not a super simple casserole, right? Well, this little recipe has won his heart and he’s already been asking me to make it again and again. I bet it makes your little taste-testers happy too. Nothing beats a casserole :).
Shopping List
1 pound of shredded, cooked chicken (click here to see how to get it)
1 can cream of chicken soup
1/2 cup sour cream
1/2 cup salsa
1 can chopped green chiles
2 cups Pepper Jack (or Monterey for less spicy) cheese, shredded and divided
2 cups tortilla chips, slightly crushed
Preheat oven to 425 degrees.
In a mixing bowl, combine first 5 ingredients plus 1 cup of cheese. Pour chicken mixture into a lightly greased 8×8 inch casserole dish. Top with remaining one cup of cheese and crushed tortilla chips. Bake uncovered about 20 minutes or until chips start to brown and casserole bubble.
Serve with extra sour cream, salsa and/or green onions.

This simple chicken dish has become one of our favorite family meals ever. 🙂 I modify it a little: I use crockpot shredded chicken with salsa, an extra can of chiles, light sour cream, less cheese and Sun Chips. My guys eat a whole 9×13 pan of this stuff in about 5 minutes. Thank you, thank you Shay for a delicious easy casserole we all love.

Could you also make this in the crockpot? Or could you not cook the chicken first and just put it all together in the casserole to bake but maybe increase time?

If you're going to put everything in the slow cooker, I wouldn't stir the sour cream in until the end. Enjoy!

I think you can freeze this without the chips on top and then when you're ready to heat, add the chips and bake.
