My Family’s Chocolate Cream Pie

 
Let me start by apologizing for this pathetic photograph.  We make this pie all the time in our family.  It’s a staple.  The day I made this one, I totally forgot about snapping a quick picture until the pie was almost gone.  I yanked this piece away from my cousin and photographed it.  She didn’t cut into the pie thinking I would blog it…thus, the very mediocre photo.  That being said…you must make this pie.  Not only is it super, super easy but it’s delicious!  You won’t find a better chocolate cream pie.  This will be a staple at your house too :).
 
Shopping List
2 1/2 tablespoons cocoa powder
1 1/4 cups sugar
1/2 cup flour
2 2/3 cups milk
4 egg yolks, beaten and in a small bowl
1/4 teaspoon salt
1 tablespoon butter
1 teaspoon vanilla
1 baked pie crust
Cool Whip or fresh whipped cream

Over medium-high heat on your stove top, cook cocoa, sugar, flour and milk until thickened (about 5 to 7 minutes…you’ll just feel the mixture thicken up a bit).  Stir continuously.

Take a few tablespoons of your hot chocolate liquid and stir it into your egg yolks.  (This will temper your yolks so you don’t get scrambled eggs.)  Pour the mixture into your saucepan on your stove and cook another two minutes.

Remove from heat and stir in salt, butter and vanilla.  Pour mixture into your baked pie crust.

Refrigerate at least 2 hours before topping with Cool Whip, slicing and serving.

Easy and delicious every time.

Right now, I’m listening to Nat King Cole sing the Christmas Song.  It just doesn’t get better than that.

    You just combined TWO of my favorite things. Nat King Cole's version of The Christmas Song is my absolute fave hands-down. And this chocolate pie looks just like the one my grandma used to make. I will be trying this recipe!

    You can top it the night before! Just pop it in the fridge when you're done. Great question!
