Wow! What a fun day today! First and foremost…my little baby brother will star tonight in my absolute favorite TV show. He’s the Bachelor! Is that crazy or is that crazy? I mean…he’s my little brother. I still can’t wrap my brain around it!

And third…this dinner was sooooo yummy. You know my love of a slow cooker…and my love of a one pot meal…and if you throw my love of cornbread in there, you know that this meal totally makes me happy. The fresh rosemary really takes it to a whole new level…hmmm…I should stop typing and go make some more. It was that good.
Shopping List
1 1/2 pounds chicken breasts (frozen or thawed…doesn’t matter)
3 cups chicken broth
1 onion, chopped
1 can cream of chicken soup
1 cup carrots (either baby carrots or chop up some big carrots)
2 tablespoons poultry seasoning
1 box cornbread mix (plus the ingredients to prepare it…I used Jiffy)
3 tablespoons fresh rosemary, chopped
**Don’t bake your cornbread, you’re just going to prepare the batter and then drop it in the slow cooker!**
In your slow cooker, add chicken, broth, onion, soup, carrots and seasoning. Cover and cook on low 6 to 8 hours (or on high 3 to 4 hours).
About 25 minutes before you’re ready to eat, remove lid from slow cooker and shred chicken right inside the pot using two forks. Take your prepared cornbread mix and stir in the fresh rosemary. Drop the cornbread mix into the slow cooker by the tablespoonful (these are your dumplings). Return lid to the slow cooker, move the heat to high and cook another 25 minutes.
That’s it! It’s a very basic chicken soup with cornbread dumplings inside. It’s warm and cozy and perfect for a winter night.

Shay- I made this tonight and the mix never hardened. It was like cornbread broth 🙁 I followed all directions to a T. It had awesome flavor pre Jiffy. I wonder what went wrong?

My guess is that you over mixed your cornbread batter. I've made it twice now and it puffed up just like the picture. Cornbread batter doesn't need to be stirred very much. You might have also made your dumplings too thin and small…I'm so sorry! I hate to hear when things don't work out! Ugggg!

I made this on Tuesday night, and it was DELICIOUS! My entire family, including my six and three year old, couldn't get enough!
I added celery to the mix just to throw in some green veggies. My cornbread hardened but formed more of a layer than dumplings. Still worked out fabulously! We are definitely adding this to the rotation!

I've been following both your blogs for awhile but just recently figured out to subscribe! I'm not much of a cook but I made this for my husband last night and he loved it. He suggested maybe putting potatoes in it to make it heartier so maybe next time I will. My dumplings also formed more of a layer on top but it was still good. I'm going to make your slow cooker stroganoff on Friday, you inspire me to cook more!

The soup was delicious!! I used less poultry seasoning and added chopped fresh parsley. To the person who said her dumplings were runny….did you see you have to turn the crockpot up to high when cooking the dumplings?
I already have the lasagna soup in the crockpot ready to go for tomorrow's dinner! Thanks!

We had this last night and it was great! Our cornbread hardened on the top as well but we just scooped some into each bowl of soup and it tasted good. We'll definitely add this into our rotation!
