Ok…you know me. I usually pride myself on serving yummy casseroles filled with all sorts of hidden goodness like spinach, kale, carrots, etc. I love tricking my family into thinking they’re eating something sinful when actually it’s full of veggies. This is not one of those recipes…
…this is one of those recipes you make when you need to make people happy. Happy that they’re eating a Frito Pie on a plate. Happy that you busted out the chips and cheese and cooked them up a hearty casserole on a cold winter’s night. This is the kind of meal you take to a potluck…the kind of meal that is gobbled up quickly because it’s just so good. Trust me…you should just make this.
Shopping List
1 pound ground beef
1 onion, chopped
1 package taco seasoning
1 bag Frito style chips
1 can corn
1 (16 oz) can chili no beans
3 cups cheddar cheese, shredded
Sour cream to garnish
Preheat oven to 350 degrees.
Over medium-high heat, cook beef in skillet until browned and crumbly. Add in onions and seasoning and saute a few minutes.
In a 9 x 13 dish, layer the ingredients two times, in this order: Fritos, corn, chili, seasoned meat and cheese, repeat.
COVER and bake about 25 to 30 minutes or until bubbly and hot in the center.
Garnish with sour cream.
Come on…you know you want to make it. You should. You’ll thank me.

I am making this for the 3rd time but was curious if I can use ground turkey instead of beef? Does that change the cooking temp or time?

Yes! This recipe is labeled one of my "one pound" recipes which means you can substitute ground beef, turkey or chicken without making any other changes. Enjoy! (And click one pound on my side bar for other recipes!)

Hi! I just made this last night. I had a question though, my casserole was a little dry. Is it suppose to be on the crunchy/dryer side? I guess I was just expecting a gooey/moist casserole. It was good, but I prefer a bit more moisture.
Any recommendations are welcome if I did something wrong!

First of all, I'm in the frigid Midwest so anything in casserole form is a hit! I just made this last night and my husband and I loved it! I do have to confess I made two separate pans of this; one for my husband and one for me. I'm allergic to tomatoes and wasn't sure how the can of chili would affect me, so I made mine with pumpkin puree instead! The saltiness of the fritos and the flavors of the beef with the seasonings added a great balance with the pumpkin! I will definitely be making this again! Thanks Mix and Match Mama!
