I like simple things in life. I really do. Baking cookies with my kids, decorating with sprinkles and M&Ms and licking the bowl are simple things…and they’re the things I’ll remember when I’m old and grey.
I’ve said it before and I’ll say it again…baking should be fun! Baking should be something you look forward to…something you do with the little ones in your life. It should not be stressful…so don’t make a stressful recipe. Make something simple, grab your kiddos and just have fun in the kitchen. This recipe will turn out delicious every time…and keep you happy too.
Shopping List
1 package sugar cookie mix (I use Betty Crocker)
1 egg
1 stick butter, softened (not melted)
green food coloring
Vanilla Frosting
Green sprinkles
M&Ms
Preheat oven to 375 degrees.
In a medium bowl, combine cookie mix, egg and butter with spoon until dough forms. (dough will be sticky…not super smooth like a cake mix) Once dough forms, add in food coloring until combined.
Drop dough by tablespoon fulls onto greased baking sheet. Bake 8-9 minutes. Cool on cooling rack. Once cooled, spread frosting over each cookie and top with sprinkles and M&Ms.
You’ll start talking with an Irish accent after eating these cookies! Festive and fun is the way of the Irish (and of these cookies!).

And if you love chocolate mint, you should try adding the andes mint pieces. Found the recipe in a magazine about 2 years ago and everyone that I've made them for just loves them! Mint and chocolate-my fave combo!

I was going to comment on the cute cookies, but then you mentioned Andes mints … I love chocolate, but love mint chocolate even more. Our wedding cake (my one requirement was that it had to be delicious – who cares about flowers and fondant!) was filled with Andes ganache and iced with white chocolate buttercream 🙂 Can't wait for your recipe! Oh, do I love me some Sugar Cookies! And prepackaged dough?!? Yes, please! And I wholeheartedly believe that desserts eaten in the name of a Holiday do not count as gluttonous or indulgent. They are a requirement. Especially when there's M&Ms involved. 🙂
