I do this a lot…I mix and match a Neiman Marcus Bar and then swear it’s my absolute favorite. I’m pretty sure that I’ve called all of my Neiman Marcus Bars my faves…but this one…this one right here…really is my favorite! (Or at least until I mix and match another one…)
This bar is lemony, light and luscious. And I couldn’t stop indulging. This is the perfect bar to take with you this spring and summer…whether it’s to the pool, a BBQ, fireworks, or just a friend’s front porch…this bar with a glass of sweet tea will make you happy. Lemon is just happy, right? So, a lemon bar…is happiness you can eat.
Shopping List
1 box of lemon cake mix
4 eggs
1 stick melted butter
1 box of powdered sugar (about 4 cups)
8 oz package of cream cheese, softened
1 tablespoon lemon zest
Preheat oven to 350 degrees. Grease one 13×9 inch pan.
In a mixing bowl, combine cake mix, 2 eggs and melted butter. Spread in bottom of pan.
In a second bowl, beat with electric mixer, powdered sugar, 2 more eggs, cream cheese and lemon zest until smooth. Spread on top of crust mixture.
Bake 35-40 minutes until edges are brown and center set (it will still be slightly wobbly in the middle).
Cool on counter 30 minutes, then refrigerate 2 hours up to 2 days.
I love lemon.

I made these on Monday using a red velvet cake mix and they were a big hit! I love this recipe because it is SO easy to "mix and match"!

I'm also Canadian, and in my area at least powdered sugar is sold in bags, not boxes, so I'm wondering about the quantity. Just how much sugar is in the 'box' you refer to? Thanks!

I just made these tonight and they were super easy fast and delicious! I was afraid they would be too lemony ( and I love lemons) but they were just right. Was I supposed to have the cake batter come up on the sides just a little? When I poured the batter it seemed to go over and the middle of it was very odd shaped. Looking forward to making some more neiman bars.

The crust layer does not have to come up over the sides, you can pour the top layer right over it. I'm so glad you liked it!

These sound fatastic, and I'm anxious to make them. In seeing the dates which the comments were posted, I assume you ladies used cake mixes which do not contain 18.25 oz. anymore, as the content of cake mixes have now been reduced. Since no-one seemed to have a problem with the outcome….I'll definately give these bars a try. Lemon desserts are SO refreshing, especially during this HOT weather.
