Memorial Day Menu

It’s Memorial Day Weekend!
Fire up the grill, gather your friends around the pool…Summer has officially begun!
No Memorial Day celebration is complete without a fabulous (and easy!) outdoor menu.  This is my menu to make your Memorial Day a breeze…
Spinach Guacamole is perfect for dipping and also for topping burgers.  Plus, it’s so easy!!
Sarah’s Pinwheels can be made in advance and have just enough kick to kick-off your summer.
Our family never has a summer party without my Mama’s Corn Salad!  It’s the perfect side to whatever you have on the grill.
These BBQ Green Beans are made in the slow cooker (so they’re simple to prepare!), plus, they’re delicious too! 
Want to jazz up your burgers just a bit?  Try my Avocado Ranch Burgers this holiday weekend.
Coconut Pie Bars are easy, delicious and just taste like summer.
And why drink your margarita when you can eat it in a cake?  This is my Margarita Bundt Cake.  Delicious!!

    I'm making "Tab's Guacamole" this weekend!!! =) I'm so thankful to be the daughter of parents who both retired from the Air Force and humbled to be called to the role of a military wife ~ to get to love on & support my US Navy sailor!! =) Woo Hoo for a fun holiday weekend with yummy food thanks to you!!

    I made the corn salad last weekend after seeing your original post about it. I can see why it is always part of your summer parties! So delicious and easy. I must stock up on corn and Chili Cheese Fritos. Yum!

    Thank you for all the delicious recipes! I have made many and loved them all! I am also a work-at-home, Jesus-loving mom of a 5 year old girl and 3 year old boy, and your site has saved me so much time in the kitchen – with delicious results! šŸ™‚

    I have a question about your mom's meatloaf (it's a chilly day here in Seattle and we need a hot meal!) Can I substitute Ritz, bread crumbs, or Panko bread crumbs for the saltines? Trying to avoid a trip to the store!

    You think Greek Yogurt or Low Calorie Sour Cream couldbe used instead of mayo? Think flavor would be changed too much?

    Paula, I've never tried substituting with either…but I think Greek yogurt might work. Let me know what you think about the results. Thanks girl!

    Shay, wanted you to know I substituted Nonfst Greek Yogurt for mayo on the Corn Salad. On a blind taste test, the whole family liked the yogurt better. It is really good. Just a tad tangy, but really good. AND-130 calories for 1 cup of yogurt verses 1050 calories for 1 cup of Mayo. I think it is a good swap. You should try it.
