I made the corn salad last weekend after seeing your original post about it. I can see why it is always part of your summer parties! So delicious and easy. I must stock up on corn and Chili Cheese Fritos. Yum!

I have a question about your mom's meatloaf (it's a chilly day here in Seattle and we need a hot meal!) Can I substitute Ritz, bread crumbs, or Panko bread crumbs for the saltines? Trying to avoid a trip to the store!

You think Greek Yogurt or Low Calorie Sour Cream couldbe used instead of mayo? Think flavor would be changed too much?

Shay, wanted you to know I substituted Nonfst Greek Yogurt for mayo on the Corn Salad. On a blind taste test, the whole family liked the yogurt better. It is really good. Just a tad tangy, but really good. AND-130 calories for 1 cup of yogurt verses 1050 calories for 1 cup of Mayo. I think it is a good swap. You should try it.
